Started out making dinner yesterday with the intention of posting the results here. But then the results were not to my liking and I began to freak out just a little. What am I going to do? I haven't written a new post in forever and then some (common theme here)! And then I had a brilliant idea. I could make a lassi to go with the curry I'll be making (the curry's already on the site) and that way I will have something new and delicious for dinner aaaand a new post! Score one for me.
I researched some mango lassi recipes and found them to be pretty similar. One recipe that I found (Mango-Mint Lassi with Indian Sweet Spices on allrecipes.com) sounded more sophisticated and a bit more complex in flavor than other lassis. I tweaked it just a bit to my taste and I'm quite happy with the results!
Ingredients
- 1 mango, peeled, pit removed and flesh diced
- 2 Tbsp brown sugar
- 1 generous Tbsp mint, lightly chopped
- 1/2 tsp ground cardamom
- 1/2 tsp ground cinnamon
- 2 tsp lemon juice
- 1 cup yogurt
- 1/2 cup milk, optional
Blend all the ingredients together, adding milk if you want a thinner lassi. Chill and serve with a spicy meal. You can also leave the sugar out for a tangier drink.
Makes two servings.
