Culinary - It's my mom's birthday tomorrow! And my poor momma got injured skiing just a few days before her birthday. So, that means she needs lots of cheering up and special things for her birthday, like a home-baked cake rather than a store-bought one!

A while ago my mom bought rhubarb out of nostalgia and we had to figure out what to do with it. I found an awesome recipe for rhubarb cake (Rhubarb Cake I on allrecipes.com) and have made it a bunch of times since then and have altered it to make it even yummier. For my mom's birthday, I knew this is the dessert I had to make. My little produce store even had rhubarb- or so I thought! I went there only to find out that they had gotten a small amount of unseasonably early rhubarb and had ran out. What to do? Tart Granny Smith apples are perfect! They offset the slightly sweet cake and the really sweet, sticky topping, just like rhubarb does.

A note on the liquids in the recipe: the original calls for 1 cup buttermilk, but I don't usually have any on hand and have found that milk mixed with yogurt works well, too. This time, I used some sweetened strawberry yogurt so that I could use less sugar. I also added a little lemon juice to the mix since the yogurt isn't sour like plain yogurt.

Ingredients
  • 1/2 cup butter
  • 1 cup white sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 2 cups cake flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 2/3 cup milk and 1/3 cup yogurt, mixed together
  • 3 granny smith apples, peeled, cored and chopped
  • 1 Tbsp flour
  • 1/4 cup butter
  • 2 tsp cinnamon
  • scant 1 cup packed brown sugar

1. Preheat the oven to 350 degrees F. Butter a 9x13 pan (or a 10x13, if you're me and don't have a 9x13).
2. Sift together the 2 cups flour, baking soda and salt. Set aside.
3. In a large bowl, cream together the 1/2 cup butter and the white sugar. Beat in the egg and vanilla. Add the sifted ingredients alternately with the milk and yogurt mixture to the butter mixture.
4. Toss the rhubarb with 1 Tbsp flour and stir into the batter. Pour the batter into the prepared pan and smooth the top.
5. Mix together the 1/4 cup butter, brown sugar and cinnamon ( I like to melt the mixture a little in the microwave). Sprinkle evenly over the batter.
6. Bake for 40-45 minutes.
