Culinery - Taco night is pretty much a staple in my house. Probably every two or three weeks we have tacos for dinner, with fresh-made guacamole, some cheese, jarred salsa, tortillas- everything you need. As much as I love guacamole, I am getting a little tired of it every time. I needed to make something new. I've made tomatillo salsa in the past, but it has been a long time. Perfect thing to bring back! I bought tomatillos and anaheim peppers and cilantro and added some onions and spices. Mmm, salsa. This salsa is a little tart at first and then has a heat at the end.

Ingredients
- 1 pound tomatillos, husked removed, tomatillos washed and cut into chunks
- 2 anaheim peppers
- 1/2 cup chopped onion
- 3 Tbsp fresh cilantro, roughly chopped
- dried cumin to taste
- dried oregano to taste
- salt to taste
- 2 cups water
2. Put the peppers, the chopped tomatillos, chopped onion, cilantro, seasonings, salt, and water in a pot. Bring to a boil, reduce the heat to medium-low and simmer 10-15 minutes until the tomatillos are soft.
3. Using an immersion blender or working in batches, process the salsa until smooth. Enjoy!
